Although Rooibos is not actually a tea, as it does not come from the tea plant, the production of red tea is similar to that of other teas. Unlike other teas, however, red tea is cultivated only in South Africa. The leaves are oxidized, which gives them their unique red coloring. Un-oxidized rooibos teas, (green rooibos) are also used to make an herbal tea, although because the production process is much more difficult, green rooibos is generally more expensive than red rooibos tea. Green rooibos also tastes different that its red cousin, as it has more of a grassy, malty flavor.
